VERGELEGEN RED 2004
The wine shows a rich ruby colour with an almost opaque centre. Cassis, pencil lead, spice and red berries abound on the nose. The delicate fruit, tannin structure and fine acidity indicate a wine of balance and finesse reflective of the Vergelegen terroir.
Only the Rondekop vineyards are used for the production of the Vergelegen. They are dry-land vineyards with a planting density of 4000 vines to the hectare on granitic soils with a deep clay/pebble base offering excellent water retention. Planted at 280-300m above sea level, the vines are cooled by moderate sea breezes every afternoon, allowing for a longer growing season.
Working with concentrated fruit from low-yielding vineyards (3-4 tons/ha), care was taken not to produce over-extracted wines. The juice was fermented with local yeasts and macerated for three to four weeks. Maturation took place in 100% new 225l Sylvain French oak barrels with at least four rackings over a 20-month period.
80% Cabernet Sauvignon, 16% Merlot, 4 % Cabernet Franc
14.5 % Alc
3.3 g/l RS
6.2 g/l TA
Enjoy now but it will improve in the bottle for at least 10 years.
!!! VERGELEGEN V 2005
The nose is complex, showing blackcurrants, cedar wood, lead pencil and cigar box aromas. These develop in the glass and are joined by raspberry, black cherry, spice and a hint of gaminess. On the palate the wine is concentrated but elegant, with fine-grained tannins. These tannins soften even further in the glass, resulting in a luxurious wine with a long aftertaste.
The vineyard used for the production of the V is Stone Pine IV. This vineyard consists of 2 adjacent units on the west to northwest facing inland slopes of Schaapenberg. It is relatively sheltered from the prevailing breezes coming off False Bay and therefore enjoys a slightly warmer but still predominantly maritime climate. The 2 units are planted on Hutton and Glenrosa soils and are both well drained and slightly limiting on vigour, but still offers a good buffer capacity supporting the vines in adverse climatic conditions. This combination of soil, climate and site ensures full ripening of the fruit without excessively high sugar levels. The vineyard used for the production of the V is Stone Pine IV. The grapes are hand picked and fermented in closed tanks at temperatures of 28 – 30 celcius. The young wine receives a post fermentation maceration of 28 days, followed by malo-lactic fermentation in new French oak. On completion of the malo-lactic fermentation the wine is again racked into 100% new French oak. The V is matured in oak for nearly 24 months, followed by 18 months in bottle before release.

VERGELEGEN WHITE 2008
Pale green colour with full ripe Sauvignon flavours dominating. The wine is rich and complex with a long aftertaste. Serve at 12-14ºC. Most enjoyable with oysters, crayfish, smoked salmon/chicken.
The Sauvignon Blanc grapes used in this blend come from the 20-year old Schaapenberg vineyard. This single vineyard is planted some 320m above sea level and directly south facing. The row direction is east-west and the vineyards are planted to 2 clones, 316 and 317. The Semillon was planted in 1991 on the south facing Korhaan flats at 220m above sea level.
Both Sauvignon and Semillon were hand picked 2-3 weeks apart, whole bunch pressed and barrel
fermented; the Sauvignon in 500 litre barrels and the Semillon in new 225 litre barrels. The wines were matured for 12 months before blending and bottling.
