The Castellero vineyard comprises 6 hectares facing south-west situated in the commune of Barolo. The Michet sub-variety of the NEBBIOLO grape is cultivated using low Guyot training with around 5000 vines per hectare. Average production is 4000 kg grapes per hectare. The grapes are picked by hand during the second half of October, with careful selection of the bunches. Fermentation takes place in 50-hectolitre oak vats and takes from 15 to 20 days with frequent pumping over the skins. It is then aged in oak barrels of medium capacity, (15 to 30 hectolitres), for about 3 years.
Organoleptic characteristics: Barolo
Colour: garnet -red with orange highlights.
Perfume: pleasing, ethereal and intense with notes of violets and old roses.
Flavour: dry, full-bodied, robust and austere, it is also velvety and aromatic.
Serve with: roasted red meats, braised beef, game, cheeses and bourguignon.
How to taste: use a large wine glass to enhance oxygenation and perfumes. The ideal serving temperature is 18°C. For very old vintages, it is advisable to serve from a decanter.
Preservation: Wine bottles should be stored lying horizontally in rooms at constant temperature, if possible. Keep away from light sources. We suggest you keep the wine in its original box.
